Lets put the design issue to rest first! Although there has been a lot of rant over the samsung S5 design especially the plastic (polycarbonate) issue over Aluminium. I would like to state that it is important to understand why Samsung sticks to its plastic design. This could be attributed to the combination of a plastic (body) and a glass (screen), on impact this is one of the best combination of materials for kinetic energy absorption to prevent the screen from breaking. Aluminium bodies are much heavier and will absorb very low amounts of the Kinetic energy which will be directed to the glass and lead to breakage. This makes Aluminium cased phones look sleek but less durable and a bit heavy. Apart from that we can start speculating on the cost of materials :). 
     The S5 has the capacity to withstand damage from dips in water and dust. Most of the ports are covered by rubber internally and you can only see this when you open the ports (which has become more difficult an issue that most water resistant phones have*). The battery is also protected in the same way.
     In terms of power and performance, the battery has been improved and the quad core 2.5 GHZ processor makes the Android phone very responsive. Ultra power feature when activated will switch your screen to black and white (grayscale) and kills idle processes to save on power. 
     The phone also comes with health apps such as the fitness tracker this has been enhanced by the heart rate monitor. It also packs a finger scanner that works with PayPal to secure your shopping online.
     The camera has also been improved and will take better shots combined with a variety of features that come with it such as the video stabilization, selective focus and more.
